Sautéed sea bass with potato mayonnaise

  •  4 sea bass fillets, skin free
  •  5-6 tbs olive oil
  •  Salt
  • Pepper

Ingredients for potato mayonnaise

  • 1 kg potatoes, peeled and cut up in cubes
  • 200 ml olive oil
  • 1-2 garlic cloves
  • 1 small piece of sea bass
  • Juice from 2 lemons
  • Salt
  • Pepper


  • Preparing the potato mayonnaise: Cut up a small piece of sea bass. Fill up a small pot with water, place the sea bass piece in and let it boil over moderate fire for 5 minutes so that the water gets flavoured.
  • When the time is up, remove the fish from the pot and keep 150 ml of the water.
  • Boil the potatoes over high fire in a pot with lots of salted water for about 20-25 minutes. As soon as they get very soft, strain them in a bowl with a skimmer.
  • Add the garlic, lemon juice, olive oil, the water, salt and pepper. Mix the ingredients with the hand blender until the mix gets smooth and creamy. As soon as it is ready, check for any salt and pepper and leave aside.
  • Cooking the sea bass: Place the fillets in a dish sprinkling olive oil, salt and pepper over both sides. 
  • Place a frying pan over high fire and when ready place the fillets in on the skin side. 
  • Roast for 2 minutes and then turn them over using a spatula. 
  • Keep roasting for 1 more minute and serve the fillets with the potato mayonnaise.

Tsoulotip: The fish is ready to turn on the other side when it starts losing stickiness to the pan.
