Fish burger with avocado sauce

For the burgers 

  • 6 sea bream fillets
  • ½ onion
  • 2 spring onions
  • ½ red bell pepper
  • ½ lime (the zest)
  • 1 tbs lime juice
  • 1 tbs parsley, thinly chopped
  • 1 tsp oregano
  • 2 tbs sesame seeds
  • 1 tbs mayonnaise
  • 1 tbs mustard
  • 1 tbs olive oil
  • 2-3 tbs grated rusks
  • salt, pepper freshly ground

For the avocado sauce

  • 1 avocado, very ripe
  • ½ dry small onion
  • 2 tbs vinegar
  • 1 tsp sweet paprika
  • A little salt
  • Pepper freshly ground
  • Zest and juice of 1 lime

To serve

  • 4 burger bread rolls
  • Tomato rounds
  • Onion rounds

Preparation of the sauce

Peel the avocado, remove the stone and put it in the blender. Clean up the onion and add it in.
Add all other ingredients and blend well until smooth. Empty into a small bowl and serve.

Preparation of the burger

Dry the fillets with absorbent paper towel and cut them up in thick pieces. Put them in the hand blender and smash them until they have the consistency of minced meat. Place the mixture in a bowl and add all other ingredients grated. Mix well by hand and divide into burgers. Spread some oil over the burgers and grill for 3-4 minutes each side. After grilling the burgers, warm up the bread rolls as well. When ready, spread the sauce over them; place the fish burgers, the onion and the tomato rounds. Cover with the other bread piece and serve.
