Garlic meagre in baking paper

  • 1 meagre
  • 6 garlic cloves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh oregano
  • 2 sprigs fresh lemon thyme
  • 10 pepper kernels
  • 2 bay leaves
  • 1 lemon
  • 20 cherry tomatoes
  • 4-6 tbs olive oil
  • Coarse salt
  • Baking paper


Spread the baking paper over your kitchen top. Place the fish in an oven pan, oil it, salt it and open holes on both sides, where you place the garlic cloves whole. In its belly, place the aromatic herbs and the lemon slices. Place the fish on the baking paper, adding the pepper kernel, bay leaves and cherry tomatoes. Wrap it up in the baking paper and roast in pre-heated oven at 200 ºC for:

Meagre sized:

1 kg → 35′

1.5 kg →  41’

2 kg →  47’

2.5 kg → 53’

For each additional half a kilo of meagre, increase the roasting time by 6-7 minutes.
