Breaded sea bass with aromatic crust and potatoes in the oven

Ingredients

For fish

  • 6 ΝIREUS sea bass fillets
  • 4 potatoes
  • 1 tsp fresh lemon thyme
  • ½ lemon
  • Zest of ½ lemon
  • Zest of ½ lime
  • ½ cup olive oil
  • salt, pepper

For the aromatic crust

  • 1 tsp fresh basil
  • 1 tsp fresh lemon thyme
  • Zest of ½ lemon
  • Zest of ½ lime
  • 1 cup bread crumbs

Preparation

Pre-heat the oven at 180 °C. Peel the potatoes and cut them in very thin rounds. Mix the potatoes with salt, pepper, lemon thyme, lemon juice, the zests and half the olive oil. Spread them on an oven pan and roast them for 30 minutes. They need to be soft, not fully roasted.

In the meantime, mix the crust ingredients in a bowl, put salt and pepper on the fish fillets. Pass the fillets through the crust mix, so that both sides are covered.

Remove the potatoes from the oven and place the fish fillets over them. Oil the fillet crust with the remaining olive oil, making sure the crust does not dissolve. In the meantime, raise the heat to 200 °C.

Place the food in the oven for 15-20 minutes more, until the fish is done and the crust is brown.
